Most of us love sandwiches in breakfast or in lunch. And when it is chicken sandwich, it becomes much more mouth-watering. Like Paneer Sandwich, Reuben sandwich, Shawarma Sandwich, Chicken Sandwich is also very popular and delicious. For chicken sandwich, shredded chicken is compulsory. Instead of boiling, I am here making shredded chicken in a different way. You can store this shredded chicken in refrigerator for 3-4 days and use it in sandwiches or in any other dishes.

- Sandwich bread slices 8
- Boneless chicken breast 2
- Vinegar 1 ½ tablespoon
- Olive oil 4 tablespoons
- Ginger garlic paste 2 teaspoons
- Cumin powder 1 teaspoon
- Red chilli flakes 1 tablespoon
- Salt to taste
- Black pepper powder 3 teaspoons
- Mayonnaise 4-5 tablespoons
- Capsicum 1 ( finely chopped)
- Lettuce ½ cup (finely chopped)
- Butter as needed
Marinate the chicken breast
Take a big bowl add vinegar, 2 tablespoon olive oil, ginger-garlic paste, cumin powder, red chilli flakes, 1 teaspoon black pepper and salt and mix well. Then add the boneless chicken breasts into the mixture add coat the mixture properly. Leave it for 15- 20 minutes.
Make the shredded chicken
After 15-20 minutes, heat 2 tablespoons of olive oil in a pan. When the oil becomes hot, place the marinated chicken breasts onto it. Let it cook on each side for 2-3 minutes and then flip it to the other side and check if it is done or cooked by poking the tip of a sharp knife onto the thickest part of the chicken. If there is no sign of pinkness and juices then it is done. It will get a nice golden brown colour when it is properly cooked. Then remove it onto a plate and let it cool down a bit. Then using two forks shred the chicken properly. So the shredded chicken is ready now.
Prepare the mayonnaise stuffing
In a separate bowl take capsicum, lettuce, mayonnaise, 2 teaspoons of black pepper and salt and mix them well. Now add the shredded chicken in it and give a good mix to prepare the mayonnaise stuffing.
Place the mayonnaise stuffing between two bread slices and grill
Now take the bread slices and spread a generous amount of the stuffing on one slice. Spread some butter on another slice and use it to close the stuffing keeping the butter-side within. Brush a little olive oil outside and grill it for 4-5 minutes. Now do the same with the remaining bread slices.
Cut diagonally and serve with tomato ketchup or green chutney
Now just cut the sandwiches diagonally to give the proper shape. Now it is ready to serve. Serve it with tomato ketchup or green chutney.
