Hong Kong Chicken or Chicken Hong Kong is a very popular Chinese dish. This delicious recipe is very famous in restaurant as a starter.

- Boneless chicken breast 500 grams (cut into small cubes)
- Spring onion 3 (separate the layers of bulbs and roughly chop the greens)
- Ginger 1 inch (chopped)
- Garlic 1 tablespoon (chopped)
- Red chilli 3 (chopped)
- Sugar 1 teaspoon
- Salt to taste
- White pepper powder 1 teaspoon
- Corn flour 4 tablespoons
- Red chilli sauce 1 tablespoon
- Red chilli paste 1 tablespoon
- Soy sauce 1 tablespoon
- Egg 1 (properly whisked)
- Chicken stock 1, ½ cup
- Vinegar 1 teaspoon
- Oil as needed
Marinate the chicken
In a big bowl, add the chicken pieces with salt, pepper powder, 2 ½ tablespoons corn flour and egg. Mix them well. Marinate the chicken for 15 minutes.
Fry the chicken cubes
After 15 minutes, heat some oil in a pan. When the oil turns hot, deep-fry the chicken cubes till they become golden and crisp. Drain the excess oil on absorbent paper.
Prepare the sauce and add the chicken
Heat 2 tablespoons oil in a pan. Add ginger and garlic and saute for some seconds. Then add the red chillies, chilli paste, red chilli sauce, soy sauce and spring onion bulbs. In high flame mix them well. Saute for a minute and then add the fried chicken and 1 cup chicken stock. Bring it to a boil. Then add in salt, sugar and vinegar. Give a good mix.
Thicken the gravy
Now in a small bowl, mix ½ cup chicken stock with `1 ½ tablespoons of corn flour. Add this mixture to the gravy and cook in low flame for a minute. Then switch off the flame. The dish is ready.
Better serve with noodles or fried rice
Garnish it with chopped spring onions green. Serve Hong Kong chicken along with noodles or fried rice.
