Mushroom Fried Rice

Mushroom Fried Rice is a quick and easy fried rice recipe. It is a very popular Indo Chinese fried rice recipe like Vegetable Fried Rice. Mushroom adds a very different flavour in this dish. Like Paneer fried rice, Vegetable fried rice, Sweet corn fried rice, this recipe is also very delicious and popular too.

  • Basmati rice 1 cup
  • Mushroom 250 grams (properly cleaned and chopped)
  • Carrot 2 (finely chopped)
  • Spring onions (white) 1 tablespoon (finely chopped)
  • Spring onion (green) 1 tablespoon (finely chopped)
  • Cabbage ¼ cup
  • Capsicum 2 tablespoons (finely chopped)
  • Garlic ½ tablespoon
  • Soya sauce ¼ teaspoon
  • Green chilli sauce ¾ teaspoon
  • Pepper powder 1 teaspoon
  • Olive oil as needed
  • Salt to taste



Soak, cook and drain the rice

Wash the rice properly and soak it for 15 minutes. Then, in a pot, bring some water to a boil and add the soaked rice along with 3 to 4 drops of olive oil and cook it properly. Now drain the water and keep it aside.

Fry the veggies

Heat some olive oil in a kadai. When it turns hot, add spring onions white and garlic. When it becomes lightly brown, add carrots, cabbage and saute till the raw smell goes off. Then add the chopped mushrooms and stir fry for 5-6 minutes or more on a high flame till the mushrooms begin to get lightly browned and then get soft. Then add capsicum, spring onion green and saute along with the veggies for 2 minutes.

Add the sauces

Now add soya sauce and stir for 2-3 minutes in high flame. Then lower the flame and add the green chilli sauce, pepper powder and salt. Mix everything properly. Stir it for some minutes till veggies are well blended. Check the salt. If needed add it now.

Add the cooked rice and serve hot

Now add the cooked rice. Mix well. Garnish with remaining spring onion green. Switch off the flame and serve hot.
