Mushroom is a used to prepare very tasty dishes like Mushroom Fried Rice, Mushroom Pepper Fry etc. Mushroom Masala is a very easy and quick recipe. The rich gravy creates a very delicious taste in this dish.

Ingredients
• Mushrooms 15-20 pieces (halved)
• Cashews 8 pieces (soaked)
• Onion 2 (big size)
• Ginger ½ inch
• Garlic cloves 3
• Tomatoes 2 (medium size)
• Green chilli 3 (slit)
• Finely chopped coriander leaves 3-4 tablespoons
• Oil as needed
• Salt to taste
• Bay leaf 1
• Cinnamon 1 inch stick
• Green cardamom 3
• Clove 2
• Red chilli powder 1 teaspoon
• Turmeric powder ½ teaspoon
• Coriander powder 1 ½ teaspoon
• Garam masala powder 1 teaspoon
• Kasuri Methi 1 teaspoon
• Fresh cream 3 tablespoons
Method
Prepare the cashew-onion paste
Cut the onion and ginger into small pieces. Now in a blender add onion, garlic, ginger, green chilli, tomatoes and the soaked almonds. Make a fine paste and set aside.
Fry the paste
Heat some oil in a pan. When it turns hot, add bay leaf, cinnamon, green cardamom and clove. When they start to splutter, add the paste and fry until the mixture thickens and changes the colour.
Add the spices and prepare the gravy
Now add coriander powder, turmeric powder, red chilli powder and garam masala powder. Mix them well. Sauté on a low heat until the mixture leaves oil.
Add the mushrooms
Now add the mushrooms and salt and sauté for 3-4 minutes. Then add some water and allow it to boil until the mushrooms become soft. Make the gravy’s consistency as per your choice.
Add kasuri methi, fresh cream
Now taste the salt and if it is perfect then add the kasuri methi while crushing through your palms. Then add the fresh cream mix it well.
Add the coriander leaves and serve hot
Now just add the chopped coriander leaves and serve hot along with roti or rice.
