Mutton Masala

Mutton masala is a very popular dish in almost every restaurant. Like other mutton dishes like mutton curry with gravy, mutton rogan josh, this dish is also very delicious. To make a delicious mutton dish, you need to bring fresh, red meat. If there is no redness in the meat, you have to avoid it. Freshness of the mutton is the main thing to make the dish juicy and delicious.

  • Mutton 700 grams (perfectly washed and cut into ½ inch pieces)
  • Onion 4-5 (chopped)
  • Tomato 3 (finely chopped)
  • Ginger garlic paste 3 tablespoons
  • Yogurt 5 tablespoons (beaten)
  • Coriander leaves 2 tablespoons (freshly chopped)
  • Turmeric powder 1 teaspoon
  • Cumin powder 1 ½ teaspoons
  • Coriander powder 1 ½ teaspoons
  • Red chilli powder 2 teaspoons
  • Garam masala powder 1 teaspoon
  • Mutton masala powder 1 teaspoon
  • Salt to taste
  • Oil 5-6 tablespoons
  • Green cardamom 4
  • Cinnamon 1 inch piece
  • Bay leaves 2
  • Green chilli slit 1



Heat oil and sauté the last four ingredients

Heat some oil in a pressure cooker and when it turns hot, add green cardamom, cinnamon, bay leaves and green chilli. Sauté all these ingredients for half a minute.

Add onions and ginger garlic paste

Now add the chopped onions and fry them till they turn golden brown in colour. Then add the ginger garlic paste and sauté till the raw smell goes off.

It’s time to add the mutton pieces

When the raw smell of ginger and garlic totally vanishes, add the mutton pieces and roast them until a change in colour appears.

Add the ground spices

Now add salt, turmeric powder, coriander powder, cumin powder, red chilli powder, mutton masala powder and mix well. Cook for about 3 minutes on low flame.

Now add tomatoes and yogurt

After 3 minutes, add the chopped tomatoes and give a good mix. Cook the mutton for 2 minutes or until the tomatoes become tender. Then add the beaten yogurt into it and cook until oil separates.

Now cook under pressure

Now add some water and the coriander leaves, mix well, close the lid and pressure cook until mutton gets tender. This will take some 6-7 whistles. After it, switch off the flame and when the pressure reduced totally, open the lid. Now add the garam masla powder and cook for 2 minutes on low flame.

Better serve with rice or roti

After cooking for last two minutes, switch off the flame. Pour it in a serving dish, garnish with chopped coriander leaves and serve hot along with rice or roti.
