Palak Paneer is a very popular, North-Indian dish. This vegetarian dish is originated from Punjab, consisting of spinach, tomato gravy sauce and paneer in a thick paste made from pureed spinach and seasoned with garlic, garam masala and other spices. It is served with Naan, Roti or boiled Rice.

- Spinach leaves (Palak) fresh 2 bunches
- Paneer (Indian cottage cheese) 250 grams (cut into medium size cubes)
- Onions 2 (finely chopped)
- Ginger paste 1 tablespoon
- Garlic paste 1 tablespoon
- Green chili 3
- Tomato puree 1/2 cup
- Cumin powder 1 teaspoon
- Garam masala
- Salt as needed
- Sugar 1 teaspoon
- Kasuri methi 1/4 teaspoon
- Cumin seeds 1 teaspoon
- Green Cardamom 2
- Cinnamon stick 1 inch
- Oil as needed
- Fresh cream 3 tablespoons
Make a fine puree of spinach and green chilies
Heat one teaspoon oil in a pan. Then add the spinach or palak and green chilies and fry for 2-3 minutes on a medium heat. Switch off the oven when the leaves wilt off. Now set it aside to cool. After getting cool, grind spinach with green chilies to a smooth puree.
Fry the paneer
Now take a pan and heat oil. Fry the paneer cubes till golden brown and keep on a paper napkin. Take 2 cups of water in a big bowl and soak the fried paneer in water for 5-6 minutes, after that drain out the water and keep it aside. This process will keep the cubes soft.
Make the tomato gravy sauce
Heat a pan with oil, add cardamoms, cinnamon and cumin seeds. When they begin to change colour, add onions and fry till they turn transparent. Now add ginger garlic paste and saute well. Then add the tomato puree, sugar and salt and cook it till they turn mushy. Now add Kasuri methi, cumin powder and garam masala to it and mix well. Add 1/2 cup of water and cook it until it becomes thick in texture and turn the flame on low.
Add the pureed spinach to the tomato gravy
Now add the pureed spinach to the gravy and mix well. Allow it to cook for 2-3 minutes.
Add paneer and fresh cream
Now the palak gravy is ready. Add the paneer and give a good mix. Then add the fresh cream, mix well and turn off the flame.
Best serve with Naan or Roti
Now the palak paneer is ready. Serve it with Naan or Roti. You can also serve with rice.
