Paneer bhurji is a popular North Indian breakfast recipe made from crumbled paneer. Bhurji means scrambled, so in this dish, the paneer aka cottage cheese is scrambled. It goes well with roti or paratha. Even one can use this as a stuffing of paneer sandwich.

- Cottage cheese or paneer 450 g
- Onions 2 medium (chopped)
- Capsicum 1 (chopped)
- Tomato 1 (chopped)
- Green chillies 2 (slitted)
- Oil as needed
- Cumin seeds 1 teaspoon
- Ginger garlic paste 1 teaspoon
- Turmeric powder 1 pinch
- Salt as needed
- Red chilli powder ½ teaspoon
- Garam masala powder 1 teaspoon
- Lemon juice 1 teaspoon
- Fresh coriander leaves (finely chopped)
Prepare the crumbled paneer
If you are using frozen paneer, either thaw it until room temperature or boil water and keep immersed for 10 minutes. Drain the water completely and crumble it using a mixer.
Fry the veggies
Heat oil in a non-stick pan, add cumin seeds and the green chillies. When the cumin seeds begin to splutter, add the chopped onions. Fry until lightly transparent. Then add the ginger paste and saute until the raw smell goes off. Now add the tomatoes, salt and turmeric. Fry for 2 to 3 minutes. Then add the capsicum and fry until they turn soft. After that, add red chilli powder and garam masala. Mix well.
Now add the crumbled paneer
Now add the prepared crumbled paneer into the pan. Stir and fry till everything blends well just for 2 minutes. Do not fry the paneer for a long time, otherwise it will lose its softness. Now just add the freshly chopped coriander leaves and give it a good mix. Turn off the flame and mix the lemon juice with it.
Better serve with roti or paratha
Now the paneer bhurji is ready to serve. Serve hot along with roti or paratha.
