Paneer Fried Rice is a very easy fried rice recipe. Just like Vegetable Fried Rice, Mushroom Fried Rice; this recipe is also very delicious. Paneer along with the veggies give a unique taste to this dish.

- Basmati rice 1 cup (1 cup=250 ml)
- Paneer 250 grams (cut into small cubes)
- Capsicum 2 tablespoon (finely chopped)
- Onion (medium size) 1 (finely chopped)
- Carrot (small size) 1 (chopped)
- Green chilli 2 (slit)
- Cabbage 3-4 tablespoons (finely chopped)
- French beans 4 (sliced)
- Ginger garlic paste 1 teaspoon
- Tomato (medium size) 1 (finely chopped)
- Pepper powder 1 teaspoon
- Shahjeera ½ teaspoon
- Soya sauce 2 teaspoons
- Olive oil as needed
- Salt to taste
Lightly fry the paneer cubes
Heat 1 tablespoon olive oil in a pan. When the oil turns hot add the paneer cubes and toss them lightly. Don’t over fry them. Drain in an absorbent paper and keep it aside.
Soak, cook and drain the rice
Wash the rice properly and soak it for 15 minutes. Then, in a pot, bring some water to a boil and add the soaked rice and cook it properly. Now drain the water. Spread it on a plate and fluff it up with a fork, add a teaspoon of oil and let it cool down.
Fry the veggies
Heat some oil in a pan. When it becomes hot, add shahjeera and when it starts spluttering, add the chopped onions. Sauté the onions till they turn translucent. Then add the ginger garlic paste and stir it until the raw smell goes away. Then add carrot, green chilli, cabbage, capsicum and beans. Sauté in a medium flame for 5-6 minutes. Now add the chopped tomatoes and sauté until it become mushy. Now add the pepper powder, soya sauce and salt. Mix everything properly and stir well in medium flame.
Add the paneer cubes and cooked rice and serve hot
Now add the paneer cubes in the pan and mix well with the veggies. Now add the cooked rice and give a proper mix. Switch off the flame. Paneer fried rice is ready. Serve it hot.
