Sandwich in breakfast, is a good start for our day. It is popular not only in breakfasts but also in lunches. You can easily take it to work, school, to be eaten as part of a packed lunch. Omelet Sandwich is a very easy and a basic type of sandwich. But we need variation in every aspects. So here we go. Today I am showing you how to make paneer sandwich. It is also a very easy one. Here, in this sandwich, I am using Paneer Bhurji as the stuffing.

- Sandwich bread slices 8
- Cottage cheese or paneer 450 g
- Onions 2 medium (chopped)
- Capsicum 1 (chopped)
- Tomato 1 (chopped)
- Green chillies 2 (slitted)
- Oil as needed
- Cumin seeds 1 teaspoon
- Ginger garlic paste 1 teaspoon
- Turmeric powder 1 pinch
- Salt as needed
- Red chilli powder ½ teaspoon
- Garam masala powder 1 teaspoon
- Lemon juice 1 teaspoon
- Fresh coriander leaves (finely chopped)
- Grated cucumber 1 cup
- Tomato ketchup as needed
- Butter as needed
- Oregano seasoning 3 tablespoons or black pepper powder 2 tablespoons
Prepare the crumbled paneer
If you are using frozen paneer, either thaw it until room temperature or boil water and keep immersed for 10 minutes. Drain the water completely and crumble it using a mixer.
Fry the veggies along with the powder masalas
Heat oil in a non-stick pan, add cumin seeds and the green chillies. When the cumin seeds begin to splutter, add the chopped onions. Fry until lightly transparent. Then add the ginger paste and saute until the raw smell goes off. Now add the tomatoes, salt and turmeric. Fry for 2 to 3 minutes. Then add the capsicum and fry until they turn soft. After that, add red chilli powder and garam masala. Mix well.
Now add the crumbled paneer
Now add the prepared crumbled paneer into the pan. Stir and fry till everything blends well just for 2 minutes. Do not fry the paneer for a long time, otherwise it will lose its softness. Now just add the freshly chopped coriander leaves and give it a good mix. Turn off the flame and mix the lemon juice with it. Now the panner bhuji is ready. Keep it aside.
Spread tomato ketchup on the bread slices and place paneer bhurji between two
Now take the bread slices and spread tomato ketchup on one side of every slices. Then take a generous amount of paneer bhurji and spread upon it. Then add some grated cucumber on it and close it with another bread slice keeping the ketchup-side within. Repeat the process with the remaining bread slices
Spread butter on the outer side and grill
Now spread some butter on the outer side of every slices and grill them for about 4-5 minutes.
Cut diagonally and sprinkle oregano seasoning or black pepper powder
Now just cut the sandwiches diagonally to give the proper shape and sprinkle some oregano seasoning or black pepper powder on it.
Better serve with green chutney or tomato ketchup
Now the paneer sandwich is properly ready to serve. Serve hot with green chutney or tomato ketchup.
