Rice Payasam or Chawal Payasam is a popular traditional Indian dessert and the very name suggests the main ingredient – rice. It is delicious and obviously very easy recipe to prepare. In India, it is very common sweet dish, made during festive seasons. It is similar to rice kheer. It is a kind of pudding, made with milk, rice and sugar.

- Rice ½ cup (1 cup = 250 ml)
- Milk 1 litre
- Sugar 1 cup
- Raisin 10 pieces
- Cashew nuts 12 pieces
- Green cardamom powder 1 teaspoon
- Roasted raisins, cashew nuts and saffron for garnishing
Wash and soak the rice
First of all, wash the rice properly and soak it in enough water for some 15 minutes.
Bring the milk to a boil and add the rice
Pour the milk in a heavy-bottomed pan. Bring it to a boil in low medium heat. In the meanwhile, drain the rice and keep aside. When the milk starts boiling, add the rice and stir. Let the rice cook till it becomes soft. Don’t forget to stir occasionally to avoid burning. At this time you can adjust the consistency. You can add more milk if you think it is becoming very thick.
Add sugar, raisins and cashew nuts
When the rice turns soft, add in the sugar along with the raisins and cashew nuts. Stir it and cook for another 5 minutes. Then switch off the flame and add the cardamom powder and mix well.
Garnish with roasted nuts, saffron and serve
The rice payasam is ready to serve. Garnish it with roasted raisins, cashew nuts and a pinch of saffron. Serve hot or warm. You can also refrigerate it before serving, to present a cold payasam.
