Suji Halwa is most popular, traditional Indian dessert which is made in any festival or occasion like Diwali. This dish is also known as Sooji ka Halwa, Rava Sheera etc. In Southern India this is known as Rawa Kesari as they use kesari or saffron in it and also they use water instead of milk. However the milk gives the dish a unique and delicious taste.

• Rava/Suji/Sooji 1 cup
• Milk 3 ½ cups (boiled)
• Ghee ½ cup
• Sugar 2 cups
• Green cardamom powder 1 tablespoon
• Cashew nuts 10 pcs
• Raisins 8 pcs
• Almonds 5 pcs(for garnishing)
Roast the suji
Heat some ghee in a thick bottomed pan. Once the ghee starts melting reduce the flame and add the rava or suji. Roast it in low flame and keep stirring continuously till it becomes light brown and emits a strong aroma.
Add the milk with the suji
Now add the milk in suji while stiring it. If any lump forms then break it using a spatula and mix well.
Add sugar, cashew nuts and raisins
Then add the other ingredients – sugar, cashew nuts and raisins in it and mix well. Then allow it to cook till the suji absorb all the liquid and become soft.
Add the remaining ghee and the cardamom powder
While the suji get its desired thickness, add the cardamom powder and the remaining ghee in it and give a well mix. Then switch off the flame. The halwa will thicken as it sits.
Garnish with almonds
Now the halwa is ready to serve. Garnish it with almonds. Serve hot or cold.
