Vegetable fried rice is a very quick and easy Indo Chinese recipe. Different types of fried rice are very popular, like, Paneer fried rice, Mushroom fried rice, Sprouts fried rice etc. Vegetable fried rice is very delicious and at the same time it’s full with the goodness of veggies.

- Basmati rice 2 cups (1 cup = 250 ml)
- Carrot 2 (finely chopped)
- Beans 2 (finely chopped)
- Cabbage ¼ cup
- Onion 1/8 cup
- Spring onions (white) 1 tablespoon (finely chopped)
- Spring onions (green) 1 tablespoon (finely chopped)
- Green chilli 1 slit
- Capsicum 2 tablespoons (finely chopped)
- Garlic 2 teaspoons (finely chopped)
- Soya sauce ½ teaspoon
- Green chilli sauce ¾ teaspoon
- Pepper powder 1 teaspoon
- Shahjeera ½ teaspoon
- Olive oil 2 tablespoons
- Salt to taste
Soak, cook and drain the rice
Wash the rice properly and soak it for 15 minutes. Then, in a pot, bring some water to a boil and add the soaked rice along with 3 to 4 drops of olive oil and cook it properly. Now drain the water and keep it aside.
Fry the veggies
Heat some olive oil in a pan, add shahjeera. When it starts spluttering, add garlic, green chilli and spring onions white and fry till it starts browning. Then add onions and fry till golden brown. Now add the carrots, cabbage and beans. Sauté well till they shrink and raw smell vanishes. Now add the capsicums, sauté with veggies for 2 minutes.
Time to add the sauces
After sautéing the veggies properly, add the soya sauce and mix well. Keep stirring in high flame for about 2 minutes. Then lower the flame and add the green chilli sauce, pepper powder and salt to taste. Mix well. Don’t forget to stir it. Cook it for few minutes till the veggies are well blended with sauces.
Add the cooked rice and serve hot
Now add the cooked rice and mix well. Finally garnish with spring onions, give a quick mix and switch off the flame. Vegetable fried rice is ready to serve. Serve hot.
